My hometown has a pumpkin festival every year and this is one of the recipes our family enjoys.
Ingredient :
- 1 small pumpkin
- 1 can of black beans
- 1 can of diced tomatoes
- 1 onion
- 1 bell pepper
- 1 jalapeno
- 2 cloves of garlic
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Directions :
1. Begin by preparing the vegetables. Peel and dice the onion, bell pepper, and jalapeno. Mince the garlic cloves.
2. Cut the pumpkin into small cubes, removing the skin and seeds. Set aside.
3. In a large pot, heat olive oil over medium heat. Add the diced onion, bell pepper, and jalapeno. Sauté for 2-3 minutes until the vegetables start to soften.
4. Add the minced garlic and continue to cook for an additional minute.
5. Add the diced pumpkin to the pot and stir to combine with the vegetables. Let it cook for 5 minutes.
6. Drain and rinse the black beans, then add them to the pot along with the can of diced tomatoes. Stir to combine all the ingredients.
7. Season the chili with chili powder, cumin, salt, and pepper. Adjust the seasonings according to your taste.
8. Bring the chili to a simmer, then lower the heat and let it cook for 20-25 minutes, stirring occasionally.
9. Once the pumpkin is soft and the flavors have developed, remove the chili from heat.
10. Serve the pumpkin chili hot, garnished with your favorite toppings such as shredded cheese, sour cream, or cilantro.
