BBQ Chicken Salad

This hearty salad, including the homemade White BBQ Ranch Dressing comes together in just 20 minutes. You can even make the dressing the day before to cut down on prep time.

Ingredient :

White BBQ Ranch Dressing:

  • 1/4 cup whole buttermilk

  • 1/4 cup mayonnaise

  • 3 Tbsp. apple cider vinegar

  • 2 Tbsp. finely chopped fresh chives

  • 1 tsp. Worcestershire sauce

  • 1/2 tsp. kosher salt

  • 1/2 tsp. garlic powder

  • 1/2 tsp. onion powder

  • 1/2 tsp. black pepper

Salad:

  • 2 cups shredded or chopped leftover smoked or grilled chicken

  • 1/3 cup barbecue sauce (such as Stubb’s Original)

  • 3 cups coarsely chopped romaine lettuce (from 1 [7-oz.] heart)

  • 3 cups coarsely chopped iceberg lettuce (from 1 [12-oz.] head)

  • 4 thick-cut bacon slices, cooked and crumbled (about 1/2 cup)

  • 4 oz. pre-shredded milk Cheddar cheese (about 1 cup)

  • 1 cup rinsed and drained black beans (from 1 [15-oz.] can)

  • 1 cup halved cherry tomatoes

  • 1 cup corn chips (such as Fritos) (from 1 [9 1/4-oz.] bag), coarsely crushed 

  • 1/3 cup thinly sliced scallions (from 2 medium [1 oz. each] scallions)

Directions :

Prepare the White BBQ Ranch Dressing:

Whisk together buttermilk, mayonnaise, vinegar, chives, Worcestershire sauce, salt, garlic powder, onion powder, and pepper in a small bowl. Cover and refrigerate until ready to use.

Combine chicken and sauce:

Toss chicken with barbecue sauce in a medium bowl until coated.

Prepare the Salad:

Place romaine and iceberg lettuce in a large bowl, and toss to combine evenly. 

Top lettuce with chicken, bacon, cheese, beans, tomatoes, chips, and scallions. Toss to combine.

Make servings:

Divide salad evenly among 4 bowls. Drizzle with dressing and serve immediately.
